Ceviche — Healthy, Simple, Refreshing Summer Dish

My all time favorite is ceviche, a Latin American dish created by marinating tilapia (fish) in lime juice.

It’s super easy, especially the way I make it — never measure, just eyeball (be careful, I ate half of the meal once “seasoning to taste”)!

Ingredients:

  • Tilapia (how much?  That’s up to you.  Available at supermarkets.  Costco, too!)
  • Lime juice (enough to cover fish)
  • Cilantro (fresh coriander, more the better)
  • Kosher Salt
  • Sambal Oelek (spicy chili paste used to make spicy tuna sushi rolls.  Available at Asian markets)

Directions:

  1. Cut tilapia into half inch squares (bite size — whatever works for you).  Place in a bowl.
  2. Soak in lime juice for minimum four hours (make sure liquid covers the entire fish.  Lime juice removes the smell.  Acid from the juice cooks the fish).  Refrigerate.
  3. Take the bowl out.  Drain lime juice.
  4. Finely chop cilantro (little or lots, your choice)
  5. Fold into cooked tilapia
  6. Put in a pinch (or more) of Kosher salt (season to taste)
  7. Put in a tablespoon of Sambal Oelek (more, way more, for a spicy dish)
  8. Serve!

The key to delicious ceviche — season to taste!
